Peru is one of the world's largest producers of certified organic and fair-trade arabica, grown almost entirely by hundreds of thousands of smallholders on plots of just a few hectares. Rather than large estates, the backbone of Peruvian coffee is the cooperative: farmers pool processing, quality control, and export access to reach specialty buyers. The result is a clean, gentle, well-balanced cup: soft acidity, caramel and cocoa sweetness, and increasingly bright separated microlots as younger producers invest in altitude, careful picking, and experimental fermentation.
