The story
Cajamarca, in Peru's far north around Jaen and San Ignacio, is the country's single largest coffee-producing department. High altitudes, cool nights, and a deep cooperative culture have made it the heartland of Peruvian organic specialty coffee, with cups that lean toward caramel, citrus, and delicate florals.
