Pacamara

Pacamara is a deliberate cross bred by the Instituto Salvadoreno de Investigaciones del Cafe in El Salvador, combining the compact Pacas with the large beaned Maragogipe to bring big beans to a manageable, higher yielding plant. Selection was carried out over subsequent decades, and the variety is grown mainly in El Salvador though it has since spread to other Central American countries. Pacamara is prized for an unusually complex, often fruit forward and heavy bodied cup, and it regularly performs well in Cup of Excellence competitions. Its main drawbacks are susceptibility to leaf rust and a more demanding cultivation profile than compact Bourbon derived varieties.
