Pacas

Pacas is a natural dwarf mutation of Bourbon discovered in 1949 on a farm owned by the Pacas family in the Santa Ana region of El Salvador. Like Caturra, it grows as a compact plant that supports denser planting and easier harvesting than standard Bourbon, and from 1960 the Instituto Salvadoreno de Investigaciones del Cafe ran a dedicated selection programme to improve and multiply it. Pacas became foundational to El Salvador's coffee industry, still accounting for roughly a quarter of the country's production, and it is valued for a clean, sweet cup close to Bourbon in quality. Crossed with the large beaned Maragogipe, it also became one of the two parents of Pacamara.
