Toraja (Sulawesi)

Tana Toraja is a mountainous region in the highlands of South Sulawesi, famous for its dramatic cliffside burial sites and its terraced coffee gardens. Arabica has grown here since the colonial period, and today smallholders wet-hull their cherries much as growers do in Sumatra. Toraja coffee, sometimes sold under the old name Kalossi, sits between the Sumatra and Java styles: a rich, rounded body with muted acidity, ripe dark fruit and warm baking spice, and a clean, savoury finish. Its remoteness and small volumes have kept it a specialty favourite.
