The story
Bajawa is a highland town on the island of Flores, set on the Ngada plateau among dormant volcanoes in the eastern reaches of the archipelago. Coffee here is grown by smallholders in the shade of taller trees on rich volcanic soil, and much of it is wet-processed. Flores arabica from Bajawa tends to be sweet and full-bodied with a syrupy texture, chocolate and brown-sugar notes, gentle acidity and a hint of florals. Long overlooked and hard to reach, it has emerged in recent years as one of Indonesia's most exciting specialty origins.
