The story

Pink Bourbon is a rare variety first noticed in the 1980s in the San Adolfo area of Acevedo, in Colombia's Huila department, and later characterised more formally by researchers working with growers such as Finca Monteblanco between 2010 and 2014. Its cherries ripen to a distinctive pink colour that sits between the red of Bourbon and the yellow of Yellow Bourbon, and for years it was assumed to be a natural cross of the two. Genetic studies carried out between 2017 and 2023 complicated that story, finding Pink Bourbon's profile closer to an Ethiopian landrace than to a straightforward Bourbon hybrid, so its exact parentage is still debated among researchers. It remains a niche, low volume variety grown mainly in Huila and Cauca at high altitude, valued in the specialty market for a floral, citrusy, tropical fruit cup.
